Vegan Coconut Banana Pancakes

I discoverded that I have a mild lactose intolerance. There are several degrees of lactose intolerant levels amongst people. Because my symptoms are moderate, I try to be fair with myself. I still eat cheeses, yogurts and butter just earlier in the day for full digestion.

So for this pancakes recipe, I choose to use "Boisson coco" from organic brand Bjorg as a substitute for regular milk. But if you don't have this kind of product you can also use almond milk or any other non-dairy milk of your preference.

For aproximately 10 pancakes

Ingredients:

  • 150 gr of flour

  • 1/2 packet of baking powder

  • 2 egss

  • 1 tablespoon of coconut oil

  • 180 ml of coconut milk

  • 2 tablespoon of sugar

  • 2 tablespoon of coconut flakes

  • 1 pinch of cinnamon

  • 1 banana

Preparation:
In a bowl, pour the flour, the coconut flakes and the baking powder, create a hole in the center. Break the eggs and add the "boisson coco" gradually while mixing. Add coconut oil, sugar, the cinnamon and keep mixing. The dough as to rest about 30 minutes. Then, peel and cut the banana into small pieces and add it to the bowl.

Cooking and presentation:
In a greased pan, cook the pancakes gently, about 5 minutes on each side. For the serving I choose to slice some fresh berries and pineapple. Feel free to them with maple syrup or chocolate spread or fruit of your liking!
