Mint Pesto & Veggie Pasta

The best thing I love about pasta?  That it's super easy and quick to cook and the recipes can be extended into the infinite margin!

I eat pasta quite often , usually before a workout and I like to serve them with fresh vegetables. This time I made it with roasted asparagus and tomatoes.


(serves 4)


Mint pesto:

  • 1 bunch of fresh mint

  • 1 handfull of non salted pistachios

  • 10cl of olive oil

  • Salt, pepper

Mix all the ingredients in a blender, pesto is ready when the pistachios are pounded.


  • 250 gr of pastas

  • 1 bunch of asparagus

  • Olive oil

  • Cherry tomatoes

  • Parmesan (optional if you want a healthy dish!)

  • Salt, pepper


Preheat the over at 220°C. Boil salted water and cook the pasta.
Cut the asparagus into small pieces, place them in a dish and sprinkle with olive oil, cook for 10 min. Once the pastas and asparagus are cooked, you just have to mix all the ingredients together, with pesto , add the parmesan ( I 'm a little heavy-handed ) , salt and pepper
